Barbecue Baked Salmon

Ingredients

¼ cup pineapple juice

2 tbsp. lemon juice

4 – 4 oz. salmon fillets

3 tbsp. brown sugar

2 tsp. chili powder

1 tsp. grated lemon rind

¾ tsp. ground cumin

½ tsp. salt

¼ tsp. cinnamon

Cooking spray

Lemon wedges (optional)

Directions

1.   Combine pineapple and lemon juices in a Ziploc® bag. Add salmon fillets, seal and marinate in refrigerator for 1 hour, turning occasionally.

2.   Preheat oven to 400°F.

3.   Remove fish from bag and discard marinade. Combine brown sugar, chili powder, grated lemon rind, cumin, salt and cinnamon in a small bowl. Coat fish with seasoning and place in an 11 x 7-inch baking dish coated with cooking spray.

4.   Bake for approximately 15 minutes or until fish flakes easily with a fork. Serve with lemon, if desired.
