The Garbacado Sandwich
2 slices Trader Joes sprouted bread (60 kcals/slice)
1/3 small avocado
1/3 cup garbanzo beans
1 (small) persian cucumber, sliced
salt to taste (truffle salt is excellent on these)
Pop bread in toaster; meanwhile, mash together garbanzo beans, avocado & salt. Divide garbacado mixture between bread slices and top with sliced cucumber. Enjoy open-faced or classic sandwich-style, sprinkling cucumber with additional truffle salt if desired.
